Blockade Runner Culinary Team

Executive Chef Jessica Cabo

Chef Jessica Cabo’s love of food began in her native Long Island, New York. Her family’s reverence for diverse ethnic dishes created the foundation of her “produce-obsessed” vegetarian and seafood-centric menus. Cabo shops local, employs healthful cooking strategies, and utilizes select items grown in our on-site gardens.

Cabo exploded onto the national cooking scene when she won a spot on the first season of Hell’s Kitchen. She made it into the final three despite having no formal training. She joined the Blockade Runner team in the spring of 2016. Flavors from California, Mexico, Asia and the Mediterranean are seen in each of her presentations.

Executive Sous Chef Travis Hammer

Travis Hammer joined the EAST Culinary Team as our Executive Sous Chef in 2019. Travis has been immersed in the culinary field since the age of 16 and received his Associates in Culinary Arts and Hospitality from a University in Decatur, Illinois. Starting college, Travis wasn't sure what career path he wanted to take, luckily his professor, a former Food Network, saw his talent and encouraged him to pursue his love for cooking.

Although his culinary training was in French Traditional fare, Travis has experience in a variety of cuisines including; Italian, Spanish, Mediterranean, and American styles. Travis comes to us from Blackfinn Hospitality out of Chicago, where he helped open restaurants nationwide.

Moving to Wilmington in 2016, Travis was excited to work at EAST Oceanfront Dining because of its proximity to the beach. He loves the opportunity to be creative with seasonal menus and to work with fresh local ingredients.

Pastry Chef Heather Crosby

Heather Crosby received her Professional Pastry Certification from the New England Culinary Institute in 2012. Her love for cooking began at a young age, watching her mother run a cake decorating business out of their home. She always loved being in the kitchen and knew that is the direction she wanted her career to go.

Heather moved from New Hampshire to Wilmington in 2015 and rejoined the EAST Oceanfront Dining Culinary Team as our Head Pastry Chef in 2022. Heather claims the most enjoyable part about working at EAST is being able to experiment in the kitchen and learn more about savory dishes, not just the sweets she love. Heather's favorite EAST dish is her vegan chocolate tart and boasts it is the best thing on our dessert menu.
